An easy and quick recipe for a fluffy yogurt cake with lemon, perfect for your afternoon treat. With simple ingredients and aromatic flavor, it's the perfect choice to accompany your coffee or tea.

Ingredients:

  • 1 container of strained yogurt (200 g)
  • 3 eggs
  • 1 container of sunflower oil or light olive oil
  • 2 containers of sugar
  • 3 containers of all-purpose flour
  • 1 packet of baking powder
  • Zest of 1 lemon
  • 1 vanilla
  • Powdered sugar for serving (optional)

Instructions:

  1. Preheat the oven to 180°C.
  2. Beat the eggs with the sugar until fluffy.
  3. Add the yogurt and oil and continue mixing.
  4. Add the flour, baking powder, vanilla, and lemon zest and mix until a homogeneous mixture is formed.
  5. Pour the mixture into a buttered and floured pan.
  6. Bake for about 40–45 minutes, until golden brown.
  7. Let it cool slightly and sprinkle with powdered sugar.

Optionally, add chocolate chips or nuts for a more special flavor.
