A healthy and vegan matcha cake recipe, perfect for breakfast or an office snack.

Ingredients:

For the cake:

  • 1 ½ cups (190 g) all-purpose flour
  • 2 tsp matcha powder (preferably ceremonial grade)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup (150 g) coconut sugar or crystal sugar
  • 1 cup (240 ml) almond milk (or other plant-based milk)
  • ⅓ cup (80 ml) melted coconut oil or vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar or white vinegar

For the glaze:

  • ½ cup powdered sugar
  • 1–2 tsp matcha powder
  • 1–2 tbsp plant-based milk

Instructions:

  1. Preheat oven to 175°C (350°F).
  2. In a bowl, sift together the flour, matcha, baking powder, baking soda, and salt.
  3. In another bowl, mix the milk, oil, vanilla, vinegar, and sugar.
  4. Pour the wet ingredients into the dry ingredients and mix.
  5. Pour the mixture into the pan and bake for 30–35 minutes.
  6. Let it cool before removing from the pan.
  7. Spread the matcha glaze and serve.
