Vegan Matcha Cake Recipe

A healthy and vegan matcha cake recipe, perfect for breakfast or an office snack.
Ingredients:
For the cake:
- 1 ½ cups (190 g) all-purpose flour
- 2 tsp matcha powder (preferably ceremonial grade)
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup (150 g) coconut sugar or crystal sugar
- 1 cup (240 ml) almond milk (or other plant-based milk)
- ⅓ cup (80 ml) melted coconut oil or vegetable oil
- 1 tsp vanilla extract
- 1 tsp apple cider vinegar or white vinegar
For the glaze:
- ½ cup powdered sugar
- 1–2 tsp matcha powder
- 1–2 tbsp plant-based milk
Instructions:
- Preheat oven to 175°C (350°F).
- In a bowl, sift together the flour, matcha, baking powder, baking soda, and salt.
- In another bowl, mix the milk, oil, vanilla, vinegar, and sugar.
- Pour the wet ingredients into the dry ingredients and mix.
- Pour the mixture into the pan and bake for 30–35 minutes.
- Let it cool before removing from the pan.
- Spread the matcha glaze and serve.
