Recipe: Beetroot Salad with Yogurt and Walnuts

A refreshing and delicious beetroot salad recipe with yogurt and walnuts, ideal for a light meal. Requires approximately 45 minutes of preparation.
Ingredients: 500g beetroot, 300g strained yogurt, 2 tbsp cream cheese, 2 cloves garlic, 2 tbsp wine vinegar, 2 tbsp olive oil, 1 tbsp dill or mint, ½ cup walnuts, salt, arugula.
Instructions: Boil the beetroot for 30 minutes. Peel, chop, and marinate with garlic, vinegar, olive oil, and salt. Add yogurt and cream cheese. Finally, mix with dill or mint and walnuts. Garnish with arugula.
