The color of honey mainly depends on the flowers from which bees collect nectar. Light-colored honeys, such as those from orange blossoms, clover, or acacia, are usually sweeter and have a delicate flavor, rich in natural sugars.

Dark honeys, derived from eucalyptus and chestnut, have antibacterial properties and are rich in minerals such as phosphorus, iron, and magnesium. Their taste is more intense, with woody or earthy notes, and sometimes slightly bitter.
